ぱにぱにぱにっく

　明治のはじめ、日本でコレラが流行りました。そのとき、「煙がくさい　→　臭いものは体に悪いはず」という「理屈」から「火葬場の煙がコレラの原因」という噂が立ちました。人々はパニックになります。うっかり葬礼（野辺の送り）に出たらコレラをうつされるかもしれないというのですから。そこで明治10年に政府は東京府病院雇教師ブーケマに火葬場の調査を行なわせ、火葬はむしろ伝染病対策に有効である（焼いたら消毒される）、という結論が出されました。

　1960年（昭和35年）イギリスで、輸入した飼料中のコウジカビのカビ毒（マイコトキシン）で七面鳥がばたばた死亡しました（最初「七面鳥Ｘ病」と呼ばれました）。このカビ「アスペルギルス・フラバス」が、日本で清酒・味噌・醤油に普通に使われるアスペルギルス・オリーゼと近縁だったため、「発酵食品を摂ったら、カビ毒で死ぬ」「日本に胃癌が多いのはカビ毒のせいだ」などと情緒的に煽る人間が現われました。例によって、日本中大騒ぎとなりました。
　そこで調査が行なわれました。日本で用いられるコウジカビ632株についてはどれもカビ毒を産生していないこと、さらには食物も検査してカビ毒がまったく検出されないことを確認して、騒ぎは収まったのです。（ところで、それまでに日本酒を飲んで醤油や味噌を食って「うっ」と言いながらばたばた死んでいく日本人がどのくらいいましたっけ？）

　で、根拠無く不安を煽って騒いで喜んでいた人間は、騒動の後は口を拭って知らんぷりでしたとさ。

衛生面に関し、私はかなり神経質なたちです。

ぬか漬けを作る時も、かなり細菌に注意して作るのですが、、、あまりに衛生的に作ったぬか漬けは、おいしくありません（爆）。

もちろん、カビを生やすのはNGです。んが、人体に無毒とされる酵母なんぞ、適度に生育できる環境が必要です。みそや醤油も、こーゆーことだと思います。

あ、やはりもちろん、抗がん剤治療で白血球が激下がりの時は、ぬか漬けは食べないようにしていましたが。

ぬか床……子ども時代のはずいぶん臭かった記憶がありますが、あれはやっぱり雑菌も生えていたんですかねえ。さすがにカビは生えてませんでしたが。最近わが家にあるのはそこまで臭くはありません。やっぱり“衛生的”なのかしら(^_^;)。

ぬか床は、厳密には空中落下細菌により有害な細菌やカビの胞子も、どーしても入ってしまいます。それが証拠に、ぬか床は一日に3回かきまわすように言われますね。かき回さないと、、、夏場はカビで、表面が真っ白になります。

つまり、カビや細菌が繁殖する前に、酵母や乳酸菌が先に繁殖し、他の有害細菌などの繁殖を抑える。これが発酵です。
ですので、白血球が激下がりの時は、食べないほうが無難です。

ぬか床を冷蔵庫保存し、細菌繁殖を抑えると、同じく酵母や乳酸菌も発酵しにくくなります。ですので、ぬか漬けとしては、味はイマイチどすえ。

ぬか漬けは、夏場に特に消費が高まるビタミンB群が多く含まれています。ぬか自体は洗い落として食べますが、野菜にぬか成分が浸透しており、ビタミン、ミネラルが豊富です。
