「セルフサービス導入」

あ～ぁ。

とうとう、いなくなっちゃった。

 

。。。だれが？

 　

今日の小料理は？

                   　第7回

　

　　「セルフサービス」

 　

です。

 　

＊＊＊

　 

売上げだけで、儲からない(＝利益がでない)とき、経営者が目を付けるのが、

　

　　　「セルフサービス」

　 

です。

 　

回転寿司。パチンコ。お好み焼き。バイキング。

みなある部分、「セルフ」です。

自分で取ります。自分で入れます。自分で運びます。

気をつけないと、こぼれます。パチンコの玉。

ボヤボヤしてると左へ行っちゃいます。回転のお皿。

 　

パチンコ産業。今でこそ少し下火ですが、一時は国の医療費に匹敵する売上を誇り、従業員数はたったの40万人そこそこ。一人当たりの売上は、どんな業界にも負けない効率です。人から人へのサービスが希薄な業界と言えるかもしれません。サービスで儲ける場所ではないようです。「飽きたら終わり」「たまに勝たせて喜ばす」世界です。

 　

人から人へのサービスとしての小料理屋。

飽きたら終わりではやっていけません。

たまにはおいしいではやっていけません。

セルフサービスで人件費を削ると、その分サービスが低下します。

低下した分、お客が必ず減ります。

 　

お客が減った分、売上が減ります。

サービスが低下しても、売上を伸ばすには。。。？

集客しかありません。

サービスの低下したお店の集客手段は「値下げ」です。

 　

 　

いまや、ディスカウント競争は、激しさを増しています。

どんな単品も、「コンビニで買うより安く」なければ集客できないところまで加熱しています。

 　

値下げしても客が増えない。。。とき。。。

これを、「あぶない」といいます。

 　

「あぶない」ことに気がつかないで続けていると、

ある日突然、家賃が払えない、給与が払えない、材料が買えない事態がきます。

これを、ふつう「終わり」または、「終了」といいます。

ゲームでいうと、「ゲームオーバー」といいます。

「何を競争するか」を間違えているかもしれません。

そもそも、サービス業の原点は。。。

 　

「サービス」

 　　

だったはずです。

 　

「安くて・イイもの」をたくさん売るのは、サービスではありません。

物をたくさん売っているだけです。これを「量販」と言います。

でも、量販は、もっと安い量販にいつか必ず負けます。

イイものはどこにでも「あふれている」からです。

もっと安く売った勝ち組は、他ではもっと安いという、ただそのことだけで負けることになります。

 　

こうなると、小料理屋がついていける世界ではありません。

 　

小料理屋どーするよ。

起死回生の策は。。。あるかしら？
