東京下町・小料理屋ものがたり

  

第四回「誰がために売る」

 

です。

 

＊＊＊

　 

料理人が作った料理を持って行くのが、

ホールのアルバイト。

  　

簡単なことです。

お皿を持って行く。

そして、片付ける。

誰でもできますもん。

 　

余ったものは、ゴミ箱にきちんと捨てるだけです。

燃えるゴミ。燃えないゴミ。ビンと残飯と紙類。

それぞれのボックスに。

高等教育を受けていますから、

こんなこと簡単です。

わけないです。

 　

ま。退屈？っていうのかしら。

忙しくないとき。

ひま？

だるい？

カレシーとか、お服さんとか、旅行とか。。。

気になります。

あしたの天気とか。

 　

＊＊＊

 　

お腹がすいて食べに来るのがお客様。

おいしい料理なら、文句無しのはずです。

 　

商売繁盛のはずです。

他に、何が必要というのでしょう。

 　

ちょっと割のいいサービスチケット？

気の利いた照明？

流行りのBGM?

 　

上品な箸置き？

立派な印刷の両開きメニュー？

お好みのスパイスチョイス？

 　

そーゆーこともいいいかも。

でも、何度も言いますが、

 　

致命的なのです。

 　

ホールのバイトは、

「お客様の。。。顔。覚えていません。」

「料理のお皿に誰が何を残したか？。。。見ていません。」

「誰が何をいつも頼むか、覚える気もありません。」

「常連さんの頼むメニューが急に変わったことに気付きません。気づいても料理長に報告はしません。」

 　

お客様の「顔と注文料理」がつながっていません。

お客様の変化が料理長に届きません。

 　

顔を覚えるなんて。。。

そんな面倒な神経衰弱。

 　

お客様の変化を報告するなんて、

そんなエキストラな料理長へのサービス。。。

 　

本気でやってもお給与は同じだし。。。

売上？

関係ないです。

経営者じゃないんですから。

 　

＊＊＊

　 

イイ料理。

元気なバイトの子。

売上は少しずつ伸びていきました。

忙しくなってきました。

 　

料理長は、人材を募集しました。

また、イイ子が入って来ました。

 　

そんな順風満帆。

お店はしずかに崩壊へと向かって行ったのでした。
